Easy White Chicken Chili in the Crockpot

Fall is the perfect time for soups in the crockpot! I love this easy white chicken chili recipe and am so excited to share it with you! I discovered this recipe last year and have made a few tweaks of my own that my family loves!

This recipe is super easy and takes about 10 minutes for me to get it all in the slow cooker! Then I can forget about it for a few hours, and dinner will be ready with a couple add ins at the end! My favorite kind of meal!

White Chicken Chili

This is the slow cooker that I use!

The ingredient list may seem a little long, but it’s mostly spices and canned items, and still so easy to whip together!

What You Need

  • 1 lb boneless, skinless chicken breast
  • 1 sweet onion diced
  • 2 tsp minced garlic
  • 3 cups chicken broth
  • 2 15 oz cans of Great Northern beans
  • 1 7 oz can diced green chiles
  • 1 15 oz can of corn
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp chili powder
  • 1 bunch fresh cilantro chopped (top half)
  • 4 oz cream cheese softened
  • 1/2 cup half and half

What To Do

  • Spray slow cooker with nonstick spray.
  • Place chicken in the bottom of the slow cooker.
  • Top with salt, pepper, cumin, oregano, and chili powder.
  • Top with diced onion, minced garlic, great northern beans, green chiles, corn, chicken broth, and cilantro.
  • Stir well.
  • Cover and cook on LOW for 8 hours or on HIGH for 4 hours.
  • Once the chicken is cooked through, shred it.
  • Add cream cheese and half and half to the slow cooker.
  • Stir and then place the lid back on and cook on HIGH for 15 minutes, or until the cream cheese has melted.
  • Serve with your favorite toppings and enjoy!

Notes

  • I like to use the top half of the bunch of cilantro chopped up, stems and all!
