Sweet Potatoes with Ground Turkey

Do you need a dinner time recipe that is both delicious and healthy? Sweet potatoes with ground turkey is both, and it’s husband approved!

I came across this combination one day totally unexpectedly! I was trying to figure out a meal to make with sweet potatoes and ground turkey because that’s all I had in my fridge. This recipe really surprised me on how good it tasted! Now this is a weekly meal around here and often we make it to take as lunch to work! It’s super easy to make and pretty quick too!

What You Need To Make Sweet Potatoes with Ground Turkey

  • 2 TBSP oil
  • 1 pound ground turkey
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp oregano
  • 1-2 sweet potatoes
  • salt and pepper to taste
  • 1/2 cup mozzarella cheese

What To Do

  1. Place the oil into a pan and let it heat up. I like to use coconut oil, but you can use any oil you like. I would suggest using a sauté pan, because it holds all of the ingredients really well.
  2. Once the oil has heated up after a minute or two, add the ground turkey to the pan. Break up the ground turkey with a wooden spoon. Add the garlic powder, onion powder, oregano, and a little bit of salt and pepper and mix it with the ground turkey.
  3. While the ground turkey is cooking, I like to peel and cut up the sweet potatoes. Dice the sweet potatoes into about half inch cubes. They don’t need to be perfect, just try and cut all of them to about the same size.
  4. After the ground turkey is cooked through, it’s time to add the sweet potatoes to the mix. Add a little more salt and pepper to the pan and mix the ground turkey and sweet potatoes together.
  5. Place a lid on the pan and cook until the sweet potatoes are tender, and you can stick a fork through them. You may need to add a little bit of water if the mixture is too dry. Make sure to stir the mixture occasionally until the sweet potatoes are done.
  6. Once the sweet potatoes are tender, add the cheese to the pan and replace the lid. Let this cook until the cheese has melted. After the cheese has melted, remove the pan from heat and stir in the cheese.
  7. Serve and enjoy!
